Healthy meals don’t have to be boring, and they don’t have to take hours to make either. Here are a few recipes to make your life easiar, healthy and tasty.

Yogurt Chicken Sandwich

2 cups rotisserie chicken

1/2 cup diced red onion

1/2 cup diced apple

1/2 cup grapes, halved

1/4 cup dried cranberries

1/4 cup slivered almonds

1/2 cup Greek yogurt

1 tbsp freshly squeezed lemon juice

1/2 tsp garlic powder

Salt and black pepper

8 slices bread

4 leaves Boston bibb lettuce

Method

In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.

Avocado Pesto Pasta

12 ounces spaghetti

2 ripe avocados, halved, seeded and peeled

1/2 cup fresh basil leaves

2 cloves garlic

2 tbsp freshly squeezed lemon juice

Salt and black pepper

1/3 cup olive oil

1 cup cherry tomatoes, halved

1/2 cup canned corn kernels, drained and rinsed

- Cook the pasta according to package instructions; drain well.

- Combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream and set aside.

- In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn.
